黄偉文師傅

黄偉文師傅於2022年5月加盟九龍香格里拉擔任米芝蓮星級香宮中菜行政總廚。才華洋溢的黄師傅專責創作時令精選及帶領香宮廚師團隊製作粵菜精品,確保菜式能貫徹餐廳一向對卓越品質水平的追求。黄師傅嚴選優質時令食材,承傳傳統粵菜烹調技術,將精緻粵菜經典演繹得淋漓盡致。

現下的中菜新趨勢,應是追求食材及烹調手法多樣化,而不再是單一菜系及技法;黃師傅創作的菜單,融合不同地方的特色如四川酸菜、粵式燉湯及南方客家甜品;又運用了來自本土及世界各地的食材,如南非鮑魚、日本松茸、美國安格斯牛肉及本地的乳龍蝦等;黃師傅更發揮其所長,揉合中西與粵菜傳統烹調手法,以低溫慢煮烹製脆皮牛腩等;最後再以整體色香味的平衡性,來完美此菜單。
